I was recently gifted the Leon Breakfast & Brunch cookery book, a wonderful collection of simple breakfast and brunch recipes.
While thumbing through the book for some Saturday morning breakfast inspiration, I started to think of all the great Sydney breakfast spots and brunch places that I've enjoyed; smashed avocado on toast, bircher muesli, pancakes with maple syrup and more, all washed down with loose leaf earl grey tea, a mocha or fresh juice.

5 free range eggs
a dash of milk
a good pinch of chopped fresh parsley
1 tablespoon of butter
salt and pepper
Crack the eggs into a bowl, addd the milk, salt and pepper, the herbs and whisk
In a heavy-based pan, melt the butter over medium heat until it starts to foam. Pour in the eggs, and start stirring at once with a wooden spoon. Keep stirring constantly as the eggs start to come together.
Cook until acquired consistency
Garnish with an extra grind of black pepper and tuck in
